waiting for a blizzard
all things in moderation. including moderation.
we've been told a blizzard will hit our city around 5:00 p.m. today. so far, it's just really windy so, we'll see. either way, i'm taking advantage of being in my tights and husbands oversized hoodie and thought i would take a quick moment to post a couple of recipes for treats i've made that don't belong on my nutritious dish blog. for that blog, i have an awesome potato and leek soup recipe to share (eventually) as well as a baked rigatoni i made last night. it was delicious!
in the spirit of this week that revolves around food (and hopefully a smidgin' of gratitude), i'd like you to have my sister-in-law's grandmothers (dogs, aunts, babies) recipe for banana bars.
simply divine.
{forgive the photography. my excuse list is long but, i'll spare you.}
banana bars with cream cheese frosting
1/2 cup butter, softened
2 cups sugar
3 eggs
1 1/2 cups mashed ripe bananas* (about 3 medium)
1 tsp vanilla extract
2 cups all purpose flour
1 tsp baking soda
pinch of salt
cream cheese frosting
1/2 cup butter, softened
1 8oz package cream cheese, softened
1 tsp vanilla extract
2 - 2 1/2 cups powdered sugar
in a mixing bowl, cream butter and sugar. beat in eggs, bananas and vanilla. combine flour, baking soda and salt; add to creamed mixture and mix well. pour into a greased 15"x10"x1" baking pan. bake at 350 degrees for 25 minutes or until bars test done. cool.
for frosting, cream butter and cream cheese together. gradually add powdered sugar (to taste) and vanilla; beat well. spread over bars.
*i used bananas i had frozen (thawed). they were black and worked perfectly!

homemade oreos
recipe courtesy of my lovely friend melissa
1 box devils food cake mix
2 eggs
1/2 cup butter, softened
mix everything together and then chill for ten minutes.
roll into 2" balls
bake at 350 degrees for 8-9 minutes (my oven requires longer)
let cool then fill with cream cheese frosting
(i use the same recipe as above for the banana bars)
